Air-Fryer Crispy Chicken

This version is designed for circulating hot air: a relatively thin coating, good spacing and a little surface oil.

Chicken safety: Keep raw chicken refrigerated, avoid cross-contamination, and verify at least 165°F / 73.9°C internally with a food thermometer. Deep frying uses very hot oil; follow suitable equipment safety guidance and do not leave frying unattended.

Ingredients

  • 2 lb / 900 g chicken thighs or drumsticks
  • 1 cup / 240 mL buttermilk
  • 1 cup / 120 g flour
  • 1/2 cup / 30 g panko
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • Cooking oil spray suitable for your appliance

Method

  1. Preheat the air fryer if your model recommends it.
  2. Mix flour, panko and seasonings. Let excess buttermilk drip from chicken and coat lightly.
  3. Arrange chicken in a single layer with airflow around each piece; cook in batches if necessary.
  4. Apply only the amount of oil spray appropriate for your appliance and coating.
  5. Cook according to appliance guidance, turning as needed, until the crust is browned and poultry reaches 165°F / 73.9°C.
  6. Rest briefly before serving.
