Classic Fried Drumsticks

Drumsticks are easy to portion and work well with a straightforward paprika-garlic coating.

Chicken safety: Keep raw chicken refrigerated, avoid cross-contamination, and verify at least 165°F / 73.9°C internally with a food thermometer. Deep frying uses very hot oil; follow suitable equipment safety guidance and do not leave frying unattended.

Ingredients

  • 8 chicken drumsticks
  • 1 1/2 cups / 355 mL buttermilk
  • 1 3/4 cups / 210 g flour
  • 1 1/2 tsp salt
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • High-heat frying oil, as needed

Method

  1. Marinate drumsticks in buttermilk under refrigeration.
  2. Dredge in seasoned flour and let rest briefly.
  3. Cook in suitable frying equipment in uncrowded batches.
  4. Because drumsticks vary in size, check each batch with a thermometer.
  5. Serve only after the thickest meat reaches at least 165°F / 73.9°C.
