Why Fried Chicken Coating Falls Off
When coating falls away, the usual cause is poor adhesion or too much surface moisture rather than a mysterious ingredient.
Food-safety note: Keep raw chicken separate from ready-to-eat foods, marinate under refrigeration, and cook poultry to at least 165°F / 73.9°C as measured with a food thermometer. Hot-oil frying requires careful adult handling and suitable equipment.
Wet surface under dry flour
Very wet chicken can turn the first flour layer into paste. Let excess marinade drip away before dredging.
Coating never rested
Cooking immediately after a heavy dredge can leave loose flour on the surface. A brief rest helps the coating hydrate and attach.
Crowding and rough handling
Pieces rubbing each other or being repeatedly moved can knock off the crust before it sets.
