Crispy Oven-Fried Chicken

A practical alternative when you want a crisp coating without managing a pot of frying oil.

Chicken safety: Keep raw chicken refrigerated, avoid cross-contamination, and verify at least 165°F / 73.9°C internally with a food thermometer. Deep frying uses very hot oil; follow suitable equipment safety guidance and do not leave frying unattended.

Ingredients

  • 2 1/2 lb / 1.1 kg chicken thighs and drumsticks
  • 1 cup / 240 mL buttermilk
  • 1 cup / 120 g flour
  • 1 cup / 60 g panko
  • 1 1/2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt

  • 2 tbsp neutral oil

Method

  1. Heat oven to 425°F / 220°C and set a wire rack on a sheet pan.
  2. Combine flour, panko and seasonings. Drizzle in oil and toss so some crumbs become lightly moistened.
  3. Let excess buttermilk drip from chicken, then press into the crumb mixture.
  4. Arrange pieces with space between them on the rack.
  5. Bake until browned and the thickest meat reaches at least 165°F / 73.9°C, turning once if needed for even browning.
  6. Rest 5 minutes before serving.
