Why a Wire Rack Helps Fried Chicken
Paper towels absorb oil but also create a flat surface where hot steam can collect. A rack allows drainage and airflow.
Food-safety note: Keep raw chicken separate from ready-to-eat foods, marinate under refrigeration, and cook poultry to at least 165°F / 73.9°C as measured with a food thermometer. Hot-oil frying requires careful adult handling and suitable equipment.
After frying
Move cooked chicken to a clean rack set over a tray. Avoid stacking pieces while they are steaming.
Before frying
A rack is also useful for holding coated chicken while the dredge hydrates.
Food safety still comes first
Do not leave cooked poultry at room temperature for extended periods simply to preserve crispness; refrigerate leftovers promptly.
