Black-Pepper Fried Chicken Thighs

Black pepper gives this recipe strong flavor without relying on chile heat.

Chicken safety: Keep raw chicken refrigerated, avoid cross-contamination, and verify at least 165°F / 73.9°C internally with a food thermometer. Deep frying uses very hot oil; follow suitable equipment safety guidance and do not leave frying unattended.

Ingredients

  • 2 lb / 900 g chicken thighs
  • 1 1/2 cups / 355 mL buttermilk
  • 1 1/2 cups / 180 g flour
  • 2 tsp coarse black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 1/4 tsp salt
  • High-heat frying oil, as needed

Method

  1. Refrigerate thighs in buttermilk.
  2. Mix flour, pepper, garlic, paprika and salt.
  3. Coat chicken and rest briefly.
  4. Cook with suitable frying equipment until crisp and 165°F / 73.9°C or higher in the thickest portion.
  5. Rest on a clean wire rack.
