Fried Chicken Seasoning Guide
Seasoning is easiest to control when it is layered: a modest amount on the chicken or marinade and another measured amount in the coating.
Food-safety note: Keep raw chicken separate from ready-to-eat foods, marinate under refrigeration, and cook poultry to at least 165°F / 73.9°C as measured with a food thermometer. Hot-oil frying requires careful adult handling and suitable equipment.

Savory base
Salt, black pepper, garlic powder, onion powder and paprika make a flexible foundation.
Heat
Cayenne, chile powder, hot paprika and pepper blends can increase heat without changing the coating method.
Herbs and aromatics
Thyme, oregano, sage, mustard powder and celery seed can shift the flavor profile without adding liquid.
