Buttermilk Brining for Fried Chicken

Buttermilk is popular in fried chicken because it adds tang, carries seasoning and creates a slightly tacky surface that helps flour cling.

Food-safety note: Keep raw chicken separate from ready-to-eat foods, marinate under refrigeration, and cook poultry to at least 165°F / 73.9°C as measured with a food thermometer. Hot-oil frying requires careful adult handling and suitable equipment.

What buttermilk does

The acidic dairy contributes flavor and helps hydrate the coating surface. It should be treated as a marinade, not as a guaranteed tenderizing shortcut.

Keep it refrigerated

Chicken should marinate in the refrigerator. A practical home recipe often uses several hours or overnight, while authoritative food-safety guidance allows refrigerated poultry in marinade for up to two days.

Season deliberately

Add moderate salt and spices to the buttermilk, then season the flour separately. This creates flavor in both the meat and crust.
