Honey-Pepper Fried Chicken

A sweet-peppery finish works best when applied just before serving so the crust stays crisp.

Chicken safety: Keep raw chicken refrigerated, avoid cross-contamination, and verify at least 165°F / 73.9°C internally with a food thermometer. Deep frying uses very hot oil; follow suitable equipment safety guidance and do not leave frying unattended.

Ingredients

  • 2 1/2 lb / 1.1 kg chicken pieces
  • 1 1/2 cups / 355 mL buttermilk
  • 1 3/4 cups / 210 g flour
  • 1 1/2 tsp salt
  • 1 tsp black pepper, plus more to finish
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 3 tbsp honey
  • 1 tbsp mild vinegar
  • High-heat frying oil, as needed

Method

  1. Coat buttermilk-marinated chicken in the seasoned flour.
  2. Cook in appropriate frying equipment until browned and poultry reaches 165°F / 73.9°C.
  3. Warm honey and vinegar gently in a small saucepan or microwave-safe bowl; stir in black pepper.
  4. Rest chicken briefly on a wire rack.
  5. Drizzle lightly with honey-pepper glaze just before serving.
