Korean-Inspired Crispy Chicken Bites

This home recipe borrows the idea of very crisp small pieces and a glossy finishing sauce without claiming to represent every Korean fried chicken style.

Chicken safety: Keep raw chicken refrigerated, avoid cross-contamination, and verify at least 165°F / 73.9°C internally with a food thermometer. Deep frying uses very hot oil; follow suitable equipment safety guidance and do not leave frying unattended.

Ingredients

  • 1 1/2 lb / 680 g boneless chicken thigh pieces
  • 1 cup / 120 g potato or cornstarch
  • 1/2 cup / 60 g flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp soy sauce
  • 2 tbsp honey or brown sugar syrup
  • 1 tbsp mild vinegar
  • 1 tbsp gochujang, optional
  • 1 tsp sesame seeds
  • High-heat frying oil, as needed

Method

  1. Season chicken lightly and coat with starch-flour mixture.
  2. Cook in suitable frying equipment in batches until crisp and at least 165°F / 73.9°C.
  3. In a separate saucepan, warm soy sauce, honey, vinegar and optional gochujang until combined.
  4. Toss cooked chicken lightly in sauce and sprinkle with sesame seeds.
  5. Serve immediately for best texture.
