Party Fried Chicken Platter

Using smaller pieces makes a party platter easier to portion and gives guests multiple textures.

Chicken safety: Keep raw chicken refrigerated, avoid cross-contamination, and verify at least 165°F / 73.9°C internally with a food thermometer. Deep frying uses very hot oil; follow suitable equipment safety guidance and do not leave frying unattended.

Ingredients

  • 1 1/2 lb / 680 g chicken tenders
  • 1 1/2 lb / 680 g wings
  • 1 lb / 450 g boneless thigh bites
  • 3 cups / 360 g flour
  • 1 cup / 120 g cornstarch
  • 3 cups / 710 mL buttermilk
  • 3 tsp salt
  • 2 tsp paprika
  • 2 tsp garlic powder
  • 2 tsp black pepper
  • High-heat frying oil, as needed
  • 3 favorite dipping sauces

Method

  1. Keep each chicken type separate so pieces of similar size cook together.
  2. Marinate under refrigeration and coat in seasoned flour/cornstarch.
  3. Cook one type at a time in suitable frying equipment.
  4. Confirm every type reaches 165°F / 73.9°C in the thickest pieces.
  5. Hold cooked chicken on clean racks without stacking.
  6. Serve with labeled dipping sauces.
