Buttermilk Chicken Tenders

A smaller-piece version of classic fried chicken that is well suited to dips and sandwiches.

Chicken safety: Keep raw chicken refrigerated, avoid cross-contamination, and verify at least 165°F / 73.9°C internally with a food thermometer. Deep frying uses very hot oil; follow suitable equipment safety guidance and do not leave frying unattended.

Ingredients

  • 1 1/2 lb / 680 g chicken tenders
  • 1 cup / 240 mL buttermilk
  • 1 1/2 cups / 180 g flour
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • High-heat frying oil, as needed

Method

  1. Marinate tenders in buttermilk under refrigeration.
  2. Combine flour and seasoning and coat tenders thoroughly.
  3. Rest coated pieces briefly on a rack.
  4. Cook in small batches using suitable frying equipment.
  5. Check for 165°F / 73.9°C before serving.
