Building a Better Fried Chicken Sandwich
A good sandwich balances crunch, moisture and structure so the bun does not collapse under a heavy piece of chicken.
Food-safety note: Keep raw chicken separate from ready-to-eat foods, marinate under refrigeration, and cook poultry to at least 165°F / 73.9°C as measured with a food thermometer. Hot-oil frying requires careful adult handling and suitable equipment.
Use an even cutlet
Uniform thickness helps the chicken cook evenly and sit neatly inside the bun.
Add acid or crunch
Slaw and pickles cut through richness and give textural contrast.
Sauce strategically
A thin layer on both buns adds moisture without soaking the crust.
